Hot Thai Salad.


Yummy!

This bowl was one heck of a bowl but so yummy.

Here are the ingredients and instructions on how you can rustle up this dish for yourselves:

  • 1 packet of noodles ( Shirataki noodles )

  • 4 heads of broccoli

  • 1/4 cup of peas and broad beans

  • 1/2 lettuce ( iceberg)

  • 1/2 a cucumber

  • 6 cherry tomatoes

  • 1 bell pepper

  • 3 stalks of celery

  • 4 asparagus spears

  • 1 BeFree wrap cut up into crisp size pieces and baked

  • Fresh mint

  • Salt & pepper

  • Flax seeds

  • Fresh garlic

  • Soy sauce

  • Ginger

  • Lime

  • PB2

  • Coconut oil

  1. Chop all your veggies, lettuce & garlic.

  2. Preheat your oven to 180 degrees C.

  3. In the oven ( I used my Halo fryer ) add your garlic and bake for 30 minutes.

  4. To a grill pan add your veggies.

  5. Add your lettuce and cucumber to your bowl or plate.

  6. Boil your noodles in salted water for 10 minutes.

  7. Cut your wrap into crisp size pieces drizzle over coconut oil and salt.

  8. Begin frying your veggies on the grill pan in soy sauce and lime.

  9. Add crisps to oven a bake for 10 mins.

  10. Drain noodles & add to a pan. Grate ginger in, add 40mls of soy sauce, the juice of one lime & 1 Tbsp of PB2.

  11. Heat until hot.

  12. Add noodles and veg to the bowl.

  13. Add roasted garlic & crisps.

  14. Sprinkle over pepper, mint & flaxseeds.

  15. Enjoy!!

You could add Tofu or add meat to this dish if you wish to add more. However I was stuffed after this dish and it was super yummy.

It has a number of good veggies that contain a good amount of protein & the added PB2 and flaxseeds also adds protein in.

Peas and broad beans are also a great form of carbs on top of the noodles & wrap, with the flax, PB2 and coconut oil been packed with healthy fats.

You can sub the wrap for actual crisps or corn chips but I thought I would try with the wraps to create the feel of croutons.

As you can see you can jazz this recipe up as you wish. The veggies I chose to use were just ones I enjoy to eat and work well in ginger & lime especially.
