We have just arrived earlier than expected to the hotel in Albuquerque - so thought whilst we are uploading today's footage I would quickly check in.
Firstly - what the hell over the EU? So disappointed - but I am not going to dwell on that situation right now, it simply angers me. People don't realise that men fought and lost their lives for peace and to be a union and they just throw it all away with a tick in a box. No harm to themselves. The issue is everyone is becoming so selfish and are out for themselves these days. Nobody is willing to work as a team, work together and create peace. The Queen and Royal family have worked so hard along with the Government to keep foreign relations strong - we have BRITAIN, we have the Commonwealth - we lost the British Empire and our powerful stand by in the 40's and now we are in probably going to simply become England - no longer Britain because our neighbours want out.
Everyone knows a team is stronger than one person - but I will end there my rant will just go on and on otherwise.
We have had a few interesting days since my last blog - we are seeing so much but this is only the surface, there is SO many things we wish we had time for, both Matthew and I wish we could have done 2-3 months on the route, it's crazy.
I have been managing to source some better food too - still not ideal but better.
The restaurants in Santa Fe seemed to love the whole gluten free vibe - there were a couple of the top restaurants who on TripAdvisor made sure they marketed themselves as 'GLUTEN FREE'.
So if you are jut gluten free - you will find some yummy foods.
These last few days have been busy but a little more chilled - less driving and more time to do activities, rather than picture stops. However the next few days will becoming more manic for sure - as we are getting closer now to VEGAS!!!! YAY. Which I simply CAN NOT WAIT FOR, then LA. So many more exciting times ahead. I just can't believe we are now half way through our tour. It has flown already and they always say that the second half goes faster - NOOOOO.
Neither of us want to come home.
We went to Whole Foods yesterday - my first time and they have some amazing things - but SOOOOO expensive. It is so, so expensive. Which meant it was a case of 'trying' a bit of the range they had to offer because you didn't want to pay out for the whole bag or whatever and not like the product at the expense it was. However I got a few good snacks - and I love my cacao which those of you who have my book will know - and I found some cacao and nut bites which are amazing, Matthew had never tried it before so made him try it and he agrees it is better than chocolate and would eat it over chocolate - so there you go. He has also enjoyed the restaurants we have gone to that have been allergy catering. Like the Vegan Thai restaurant I took him too - they had no meat dishes but he found a rice peanut dish and really enjoyed it. So there you go!! Proves that eating plant-based and having allergies - if you find the good foods it is better than eating normally.
Today we also went to a shooting range - and those following me on Snapchat will know how disgusted I was with the whole affair. Of course Matthew wanted to do it for the experience and whilst he is here and I understand that but GOD - literally anyone can walk in and pay around $60 dollars for an hour 100 rounds, gun hire and lane hire, no training, no real instructions - just the gun and there you go!!
Plus you can do it from as young as 8 years old!!!!!! WHAT IS THAT. I am just blown away - but Matthew and I are going to vlog and make a video talking about it on our drive tomorrow.
Anyway - dinner plans are calling us.
What out for today's snapshot video on YouTube - I'll have it with you by morning your time - boy we have lost all aspect of English time now.
Remember you can still get your Sophantastic Allergy-Free Creations book from Amazon, the look inside feature is now on too - YAY! So that may help you have a little more insight before you purchase.
Thank you all for your continued support, I hope you are enjoying the snapshot videos and watching our journey through Snapchat.
We sure are having the best time - I am sorry I don't have more time to check in with you more.
Keep cooking, keep things fresh and keep spreading the kindness.
Love and Peace xo
Feeling sluggish and rubbish when you have woken up? Get boosting up on bananas the more the better - they will help settle your stomach, boosting digestion, they are a mood enhancer, they will give you the energy you need and keep you full. Buy my book for banana receipe ideas.
Wake up every morning and ATLEAST have one glass of lemon water before doing anything else! Ideally try to drink a litre of water. The lemon wakes up your digestive system ready for the day and has great cleansing properties.
Check your dairy and meat intake - dairy can sit in your system for up to seven days unable to digest properly. Meaning other foods also get neglected and nurtients aren't absorbed properly and you feel extremely bloated. Go and smell your food bin, your stomach will be in that state. Rotting foods in your belly - hmm nice.
DO NOT FEAR CARBS - THEY ARE NOT THE ENEMY! CARB UP!!
Bananas, Rice, Potatoes, Leafy Greens, Corn, Beans, Lentils etc PACK THEM IN GO MAD.
NEVER COUNT CALORIES - NEVER RESTRICT!! These restriction 'starvation' diets who tell you to only eat 500 calories a day then have a treat day - where you binge out and eat WAY too much, is simply messing up your metabolism and on your binge days yours body stores all the fat meaning you gain weight because it knows it is going to go back into starvation mode and needs to hold onto every little thing it can. HELLO WEIGHT GAIN.
Life is too short not to live it to the full, making yourself happy.
