This morning I woke up motivated to work on my book and get int the kitchen. Yes my kitchen is now a mess but the result should be good. I am so pleased because all my recipes so far have worked out well and it has been quite a task to create and come up with them so everytime I am baking and cooking I am taking risks - luckily they are paying off. The outcomes when they come out well makes me so happy and excited. ( SORRY MAMA, MATTHEW AND NANA for all my random pictures) but for you guys I am keeping most of it all unwraps so then you can enjoy the book fully without any spoilers.
Though I think I am really acing the American vibe with my food I am creating but it does have a Sophie twist, with my favorite veggies, grains, fruits added in to make the recipes a little unique. I am so excited for you all to try them.
I have been working on a cheesecake today which is in the freezer as we speak but I simply can't wait to try, I have Matthew coming round later - so there will most probably be a cheesecake binge around half 5... that is how we roll, be powered by plants and enjoy dessert at any point of the day. I have dedicated this cheesecake to him too as I have used my fave nuts and Matthew's fave ice tea flavours because we drank SOOOOO much iced tea on our journey. Cheesecake IS the dessert in America so thought the combo was showing our journey but putting our stamp on things. EXCITED TO TRY. If you follow me on Snapchat you will have seen the progression.

I have just been writing my dedications too - and boy, I have been writing and getting so tearful. Not because I am sad but sometimes (especially when you suffer from anxiety and depression) you sometimes feel alone and writing out my dedications shows that I have the BEST people in my life, I am so blessed and grateful; my Nana & Grandad, Mama & Papa and Matthew - I am just SO grateful for and all of my family and close friends. The support you give me I can never fully repay back but just know I am truly grateful and really do appreciate it. I love you all so much. Nana and Grandad you are true inspirations, Mama my true bestie and soul sister, Papa supports my love of travel and allows me to grow and learn and I am truly inspired by his success and Matthew true bestie, the most loyal person ever, truly truly grateful - couldn't stop writing about you all because you mean so much to me and I am truly blessed and grateful to have you. I love you all and thank you.
So now I am going to get back to work - and on it. I just wanted to share with you my book progression and cooking successes. Loving these recipes and hope you all will cook and enjoy them too very soon.
