I have had a busy weekend of baking warming, quick, comforting snacks. The cold weather is really here now and will be set to stay for the next few months. So I am definitely craving more warming foods.
I have lots of lovely comments and requests for my flapjack recipes. So I will share with you my Autumn Seasonal recipe and my Tummy Soothing flapjack recipe today.
Tummy Soothing Flapjack:
Chewy, tasty, warming and everyone knows if you are suffering stomach upsets to rely on bananas to help.
Reminds me more like banana bread as the mashed banana makes the mixture a little wetter.
1 x banana
70g x oats
1 x handful of raisins ( optional)
1 x tsp of coconut flakes
1 x tsp of trivia
2 x Tbsp of Fruit Syrup / Maple Syrup
20g of soya spread - you can use coconut oil or nut butter if you prefer
A dash of plant-based milk
Mash your banana, add all your ingredients and mix well.
Add to a 160 degree C fan assisted oven and bake for 25 minutes.
Allow to cool and cut into little squares or eat from your dish.
Makes 8 bite sided squares.
Gingerbread Flapjack - MY FAVE.
(Requested recipe! )
I love ginger as a spice - its amazing for your immune system, helps with nausea, helps with stomach upsets and is a warming spice. Everyone knows I start everyday with a ginger tea
Makes 12 squares
300g of Free From Oats
20g of crystallized ginger pieces
50g of soya butter - you can use nut butter or coconut oil but the spread just mixes so much better
50ml of plant-based milk
50ml of water
4 Tsbp of Fruit Syrup/ Maple syrup
2 x tsp of Trivia
2 x tsp of cinnamon
1 x tsp of ginger
1 x tsp of vanilla
1 Tbsp of flaxseeds
1 handful of gojji berries ( you can add any dried fruit you wish )
Your oven should be set to 160 degrees C and you simply weigh out all your ingredients add them all to a bowl, along with your spices and syrups. Mix well and add to a greased oven proof dish/tray. Bake for 25 minutes. Once baked allow to cool for around 20 - 30 minutes and slice into squares. I added a few more ginger pieces and berries to the top.

Wake up every morning and ATLEAST have one glass of lemon water before doing anything else! Ideally try to drink a litre of water. The lemon wakes up your digestive system ready for the day and has great cleansing properties.
Check your dairy and meat intake - dairy can sit in your system for up to seven days unable to digest properly. Meaning other foods also get neglected and nurtients aren't absorbed properly and you feel extremely bloated. Go and smell your food bin, your stomach will be in that state. Rotting foods in your belly - hmm nice.
DO NOT FEAR CARBS - THEY ARE NOT THE ENEMY! CARB UP!!
Bananas, Rice, Potatoes, Leafy Greens, Corn, Beans, Lentils etc PACK THEM IN GO MAD.
NEVER COUNT CALORIES - NEVER RESTRICT!! These restriction 'starvation' diets who tell you to only eat 500 calories a day then have a treat day - where you binge out and eat WAY too much, is simply messing up your metabolism and on your binge days yours body stores all the fat meaning you gain weight because it knows it is going to go back into starvation mode and needs to hold onto every little thing it can. HELLO WEIGHT GAIN.
