Sophantastic's Christmas Day 4; Smash That Mash! Potato Options and Recipes.

Everyone knows the perfect mash equals the ultimate roastie. Though the normal mash consists of endless amounts of cheese, sometimes cream & plenty of milk. Especially if it's also packaged - it still contains milk powder.
Myself I love sweet potatoes far more than normal potatoes, however I will give you both options and ideas so you can use your personal faves! Remember create a plate filled with goodies YOU enjoy! We are all different with different tastes. Adapt my recipes around yourselves.
Here we go!
Cheese Please Mash;
2 x medium marie rose potatoes
1/4 cup of almond, coconut or soy milk ( you choose )
1/4 cup of dairy free Free & Easy cheese sauce
Salt & Pepper to taste
- Boil your potatoes for around 10 minutes or until soft.
-Drain and mash.
-Make up cheese sauce following instructions ( I advise making the cheese thicker rather than thinner ) and measure out milk.
-Pour in wet incredients.
-Heat through until your potatoes are hot and you reach the constinency you like.
-Add salt and pepper to taste and sprinkle over some fresh chives for extra flavour.
Want an even creamer mash?! Switch up your milk for alpro's single cream. You can purchase this in a small carton which will work in this recipe.
Sweet Potato Mash;
2 x medium sweet potatoes
1/4 cup of almond milk
5ml of apple cider vinegar
Like it sweet?
Add 1tsp of cinnamon
Like a little spice?
Add 1tsp of cayenne pepper
Salt and pepper to taste and a sprinkle of rosemary ( dried or fresh works ).
-Boil your potatoes for 10 minutes or until soft.
-Drain and mash.
-Add your milk, coconut is also lovely.
-Add your vinegar with the spices of your choice.
-Heat through and mix well.
-Add salt and pepper to taste and sprinkle over some rosemary.
Also a nice touch if you have made the sweet version of this dish is to finish your mash off with a drizzle of maple syrup! Yum!!
Buffet Potatoes? Not a fan of mash?
Shout out to Amy Carter, who bought a vegan, plant-based sour cream from the Free-From aisle yesterday and made mini jacket potatoes topped wort the Free From sour cream, she did add normal cheese but you guys can simply top with fresh chives. Or simply pour over your Free & Easy cheese sauce. A great easy buffet idea.
You can also bake a sweet potato and have a sweet potato jacket potato which you can top with Free and Easy cheese sauce, add papkrika, salt and pepper for a spicy potato or add cinnamon and maple syrup for a sweeter option.
Make sure you score your potatoes and roast in an 180 degrees C oven for 40-45mins.
Too stuffed - need a lighter option?
The peach, sweet potato salad I created to celebrate my first book may take your fancy.
1 orange sweet potato
1 purple sweet potato ( booths )
1 lime - zest and juice
6 cherry tomatoes
1/4 ice burg lettuce
-Boil potatoes until soft.
-Chop fruit & veggies.
-Add all the fruit and veg to a bowl, drain your potatoes and add them too.
-Zest in your lime and add the juice.
-Salt and pepper to taste and serve.
Many of you are effected by oils! It's quite surprising really. So if you are craving chips this holiday season or prefer having chips over mash or boiled potatoes. Simply chop your potatoes into fries and coat in coconut oil, with salt and pepper, baking at 180 degrees for 25 minutes.

Check your dairy and meat intake - dairy can sit in your system for up to seven days unable to digest properly. Meaning other foods also get neglected and nurtients aren't absorbed properly and you feel extremely bloated. Go and smell your food bin, your stomach will be in that state. Rotting foods in your belly - hmm nice.
DO NOT FEAR CARBS - THEY ARE NOT THE ENEMY! CARB UP!!
Bananas, Rice, Potatoes, Leafy Greens, Corn, Beans, Lentils etc PACK THEM IN GO MAD.
NEVER COUNT CALORIES - NEVER RESTRICT!! These restriction 'starvation' diets who tell you to only eat 500 calories a day then have a treat day - where you binge out and eat WAY too much, is simply messing up your metabolism and on your binge days yours body stores all the fat meaning you gain weight because it knows it is going to go back into starvation mode and needs to hold onto every little thing it can. HELLO WEIGHT GAIN.
Life is too short not to live it to the full, making yourself happy.
