FAMOUSLY FABULOUS FLAPJACK

I am on a journey to see if I can recreate my favourites that don't cause me too many symptoms.


Despite the stomach ache & discomfort, I am enjoying my flapjacks.


The feedback I am getting is that they taste like 'Christmas' & we all want a bit of that. So, here is the recipe.


These flapjacks ARE VEGAN & I did make my own peanut butter ( BLENDED UNSALTED PEANUTS, ADDED ALGARVE NECTAR & A PINCH OF ROCK SALT).




Makes 11 triangles

Time-

Prep: 15 mins

Bake: 15- 20 mins

Ingredients:


250g oats

1tbsp of peanut butter

2 apples

3tsps of cinnamon

1 tbsp algarve nectar

3 tbsp of trivia sugar

20g of frozen cherries


Create:

  1. Pre-heat your oven to 180 degrees C.

  2. Weigh out your oats, add to a bowl and add your cinnamon, sugar, peanut butter, algarve nectar.

  3. Weigh out your cherries & chop apples leaving half an apple to add for decoration.

  4. Add fruit to a pan and add some boiling water. Boil until water has evaporated & your fruit is soft. You can mash the fruit yourself or add it to a blender if you don't like fruit chunks.

  5. Add the fruit to your mixing bowl.

  6. Mix well.

  7. Line a 9 inch cake tin & add mixture to your bowl. Add you extra chopped apple for decoration.

  8. Add to the oven an bake for 15-20 minutes,

  9. Remove from the oven. Allow to cool or eat whilst warm ( my fave ).

  10. Drizzle some extra algarve nectar & enjoy. Cling film/store in an air tight container & they keep for up to 3 days.
